A Morphological Basis for Higher Niacin in Sugary Maize

Abstract
Previous studies have shown that sugary (su1) maize endosperms or kernels contain about twice as much niacin as those of the normal starchy (Su1) allele (1-3). The data in this paper show that the higher niacin has a morphological basis in that sugary kernels have more niacin-rich aleurone tissue than starchy. This finding makes suggested biochemical explanations (4-5) of the carbohydrate-niacin differences unnecessary.
